I had no idea that I needed a virtual assistant, much less what one was until I had this really friendly chat with my friend and accountability partner, Tuesday Semmens who is a virtual assistant specifically for people in the fields of health and well being.

My health(ier) blueberry bran muffins:

Ingredients

2 Eggs
1.5 Cups Wheat or Oat Bran
1 Cup Coconut, Almond Milk or Milk Substitute (I like Califia’s toasted Coconut combo or Milkademia)
1 Cup Apple Sauce
1/2 Cup Almond Flour
1/2 Cup Oat Fiber
1/4 Cup Coconut Flour
1/4 Cup Tapioca Flour
1/4 Cup Melted Ghee or Coconut Oil
1/4 Cup Blackstrap Molasses
1/4 Cup Maple Syrup
1/4 Cup Honey
2 tsp Baking Powder
2 tsp Baking Soda
2 tsp Vanilla
1/2 tsp Sea Salt (I use Real Salt)
1.5 Cups Fresh Blueberries
Cupcake tins and muffin pans

Directions

Preheat oven to 350
Wisk dry ingredients
In separate bowl, beat wet ingredients (not blueberries).
Fold wet and dry ingredients together with spatula. Blend until mealy.
Gently fold in blueberries.
Place cupcake tins in muffin pan
Spoon mix into each tin mostly full
Bake on 350 for 15-20 minutes
Allow to cool in pan
Makes 24
